Spring is flower season at the orchard and is also a very busy time for the orchard nurses.

After the snow and frost of the harsh Hokkaido winter, every apple tree is inspected for bark damage. The bark from the damaged area is carefully removed; then lovingly dressed and slowly nursed back to health.

Hokkaido Large Scallops

The key to preserving the sweet freshness and succulent texture of our Hokkaido scallops is our -20ºC to -40ºC facilities. Our scallops are individually quick frozen while fresh to lock in the freshness.

Direction: Defrost overnight in refrigerator (preferred) or in room temperature for faster defrosting. Best served just before completely defrosted.

Hokkaido Wild Salmon Roe (Ikura)

These ikura are from salmon caught off the coast of the Shiretoko Peninsula from Sept to Oct. The roe is mixed with JAS approved organic soy sauce for mild flavoring. This allows the wonderfully intense natural flavor of the fresh salmon roe to come through without being masked by salt like lesser quality ikura.
