There are many ways to enjoy your fresh direct-from-farm Hokkaido white asparagus.  But simple is best to fully enjoy their fresh natural delicious flavor.

White Asparagus Salad

  • Peel a thin layer off the bottom 2/3 of the stalk with a vegetable peeler
  • Cut off the bottom 2cm or so
  • Slice the asparagus into thin diagonals
  • Mixed them with plenty of olive oil
  • Sprinkle with salt & pepper and serve

Be sure to safe the parts you trimmed off for making broth.  You will be amazed by the delicious flavor.  See the recipe below for details.

Boiled White Asparagus

Boiled White Asparagus

Unlike the green variety, white asparagus should always be peeled to bring out the best flavor.  But don’t throw away the trimming!  Save them for a delicious broth that could be served on it’s own or as stock for creamier soups.
Here’s how cooked the asparagus and the broth at the same time.     

  • Start by boiling some water.  To cook all 800g at once, use about 2 litres of water to make sure all asparagus are covered when cooking
  • For every 1 litre of water add 1 teaspoon of salt, 1 teaspoon of sugar and 1 teaspoon of butter 
  • Peel a thin layer off the bottom 2/3 of the stalk with a vegetable peeler
  • Cut off the bottom 2cm or so
  • Once the water boils, add the asparagus and the trimmed off parts
  • Boil for 5 minutes
  • Then turn off the fire and let the asparagus soaked for another 5 minutes

​The asparagus is ready to be served and you also have a delicious pot of broth!  I usually prefer adding a little butter to the warm asparagus…heavenly!
